Step 1
In a medium bowl, mix the Cajun Seasoning (1 1/2 Tbsp) and Granulated Sugar (1/2 Tbsp) together. Add the Shrimp (12 oz) and toss to combine. Marinate for 5-10 minutes.
Step 2
In a blender, blend the Avocado (1) , Ranch Dressing (1/2 cup) , 1 Tbsp of Lime (1) , Water (1 Tbsp) , Salt (1/4 tsp) , and Ground Black Pepper (1/8 tsp) until combined. Set aside in the fridge until ready to eat.
Step 3
In a grill pan, heat the Oil (1 Tbsp) over high heat. Add marinated shrimp and cook for about 2 minutes per side until opaque and slightly brown from caramelizing
Step 4
In a large bowl, add the Salad Greens (4 1/2 cups) , Cherry Tomatoes (3/4 cup) , Sweet Corn Kernels (1 can) , and drizzle with salad dressing. Mix until combined.
Step 5
Place the shrimp on top of the salad. Serve.
