Sweet Corn Kernels , drained

Salad Greens

Quartered Cherry Tomatoes

Salad Dressing

Ripe Avocado , halved, pitted

•

1/2 cup

Ranch Dressing

•

Lime , juiced

•

1 Tbsp

Water

•

1/4 tsp

Salt

•

1/8 tsp

Ground Black Pepper

Cooking Instructions

In a medium bowl, mix the Cajun Seasoning (1 1/2 Tbsp) and Granulated Sugar (2 tsp) together. Add the Shrimp (12 oz) and toss to combine. Marinate for 5-10 minutes.

In a blender, blend the Avocado (1) , Ranch Dressing (1/2 cup) , 1 Tbsp of Lime (1) , Water (1 Tbsp) , Salt (1/4 tsp) , and Ground Black Pepper (1/8 tsp) until combined. Set aside in the fridge until ready to eat.

In a grill pan, heat the Oil (1 Tbsp) over high heat. Add marinated shrimp and cook for about 2 minutes per side until opaque and slightly brown from caramelizing

In a large bowl, add the Salad Greens (12 oz) , Cherry Tomatoes (4 oz) , Sweet Corn Kernels (1 can) , and drizzle with salad dressing. Mix until combined.

Place the shrimp on top of the salad. Serve.
