Heat a large pot with Olive Oil (3 Tbsp). Add the Onion (1), Carrot (1), and Celery (1 stalk) with Salt (1 pinch). Stir occasionally. Cook for approximately 7 minutes.

Add the Garlic (3 cloves) and cook for another minute.

Add the Lentils (2 1/3 cups), Vegetable Broth (8 cups), Bay Leaves (3), and Ground Cumin (1/2 tsp).

Cover pot and bring to a boil, then reduce heat to low. Cook for about 40 minutes.

Meanwhile, heat a pan with oil and add the Mushrooms (2 cups) with salt. Cook for about 9 minutes.
