Author's Notes

Roast a head of garlic ahead of time. Preheat the oven to 375 degrees F (190 degrees C). Cut the top off of the garlic to expose the cloves and drizzle the top with olive oil. Sprinkle it with salt as well, then wrap it in foil. Roast it for an hour, then refrigerate it and use it as you need it!

Get out your trusty slow cooker. Then take the Beef Chuck (5 lb) and trim any excess fat.

Lay the beef out in the bottom of the slow cooker, then pile the Yukon Gold Potatoes (6), Carrots (6), Onions (3), Garlic (2 cloves), and Fresh Rosemary (1 sprig) on top of it.

Then stir the Beef Consommé (3/4 cup), Ketchup (1/4 cup), Apple Cider Vinegar (1/4 cup), Worcestershire Sauce (2 Tbsp), Salt (1 tsp) and Freshly Ground Black Pepper (1/2 tsp) together in a bowl and pour it into the crock pot. Seal the slow cooker with its lid and cook everything on low for 8 hours. Then serve immediately!
