Step 1
Preheat oven to 400 degrees F (200 degrees C).
Step 2
In a medium saucepan, add
Butter (3 Tbsp)
over medium-high heat and let it melt.
Step 3
Once the butter is melted, add
All-Purpose Flour (3 Tbsp)
. Mix together and add the
Dried Thyme (1/2 tsp)
and
Onion (1)
. Cook for about 1 minute.
Step 4
Combine
Whole Milk (1 1/4 cups)
and
Heavy Cream (1/2 cup)
, and add both into the saucepan.
Step 5
Add
Salt (1/2 Tbsp)
and
Ground Black Pepper (to taste)
. Stir occasionally and let thicken.
Step 6
Once mixture has thickened, add
Sharp Cheddar Cheese (1 1/2 cups)
and allow it to melt.
Step 7
Pour some of the sauce into the bottom of a baking dish, and spread for an even coating.
Step 8
Layer half of the
Potatoes (2 lb)
on top, and top with another layer of sauce, again spreading to create an even layer.
Step 9
Lay the last of the potatoes and top with the last of the sauce.
Step 10
Sprinkle
Sharp Cheddar Cheese (1/2 cup)
on top of the dish.
Step 11
Cover with aluminum foil and bake for 45 minutes or 1 hour in the preheated oven.
Step 12
Remove the foil and bake for another 15-20 minutes, until cheese is melted and bubbly.
Step 13
Let cool. Serve and enjoy!
