Author's Notes

If you can't find tempura flour, use equal parts all-purpose flour and corn starch, and then 1 tsp baking powder.

In place of apricot jam, you can use any pear, orange, apple, or other stone fruit jam.

Don't use soft or medium tofu because it's going to fall apart.

Tear Extra Firm Tofu (2 blocks) into chunks and place them in a bowl. Add Vegetable Broth (2 cups) and coat each piece of tofu completely. Let it sit for about 15 minutes or cover and refrigerate for up to 24 hours.

In a deep fryer or a large pot heat Oil (as needed) to 350-375 degrees F (180-190 degrees C).
