Author's Notes

To roast garlic, pre-heat the oven to 400 degrees F (200 degrees C). Remove the outer layers of the garlic head, and cut off the top to reveal the cloves inside. Drizzle some olive oil on top, wrap in foil, and roast in the oven for about 1 hour.

It can be stored in the refrigerator for several weeks.

Take a pot and heat the Olive Oil (1 dash) over medium-high heat. Then add Heirloom Tomatoes (3), Garlic (6 cloves), and Fresh Basil (1/4 cup), cook for a few minutes or until they start to get fragrant.

Pour in Lemons (2). Season the sauce with Salt (2 pinches) and Crushed Red Pepper Flakes (2 pinches).

Let it simmer for about 15 minutes on medium heat.

In the meantime, take a second large pot with water, bring to a boil and add salt. Put in the Spaghetti (1 lb) and cook for about 8 minutes or until tender.

Before you drain the pasta water, scoop 1/2 cup of pasta water and pour into the pot of sauce, along with the Grated Parmesan Cheese (1/2 cup).

Finally, toss the drained spaghetti into the sauce and stir until everything comes together.
