Yields 40 cookies.

Just like most homemade cookies, these do tend to get just a little softer the day after you make them. If you prefer your cookies very crunchy, pop them in the toaster oven for about 2 minutes then allow them to cool. They'll be fresh-out-of-the-oven crunchy again!

Cooking Instructions

Step 1
Preheat the oven to 350 degrees F (180 degrees C).
Step 2
Place Butter (2 sticks) and Granulated Sugar (1 cup) in a mixing bowl. Cream the butter and sugar with a hand or stand mixer at medium speed for about 2 minutes.
Step 3
Add Egg (1) and Almond Extract (1 tsp) . Mix at medium speed for 1 more minute.
Step 4
In a separate bowl, whisk together Almond Flour (1 1/2 cups) , All-Purpose Flour (1 1/2 cups) , Baking Soda (1 tsp) , and Salt (1/2 tsp) .
Step 5
Add the dry ingredients gradually to the wet ingredients about 1/2 cup at a time and mix until well combined.
Step 6
Line a baking sheet with parchment paper. Scoop heaping tablespoons of the cookie dough onto the sheet, leaving about 2-inches of space in between each cookie. Top each cookie with one of the Sliced Almonds (1/4 cup) .
Step 7
Bake in the oven at 350 degrees F (180 degrees C) for 10–12 minutes or until the edges are slightly brown.
Step 8
Allow the cookies to cool on wire racks.
