Step 1
Place a little bit of
Vegetable Oil (1 tsp)
in a large, deep pan over low to medium heat. Add in
Yellow Onion (1)
. Stir occasionally for about 5 minutes.
Step 2
Add in the
Garlic (4 cloves)
. Stir for a few minutes, until aromatic.
Step 3
Add in
Dijon Mustard (1 tsp)
,
Ground Turmeric (1 tsp)
,
Ground Coriander (1/2 tsp)
,
Mild Curry Powder (1 tsp)
,
Ground Cumin (1 tsp)
, and
Salt (to taste)
. Stir around for about a minute.
Step 4
Add
Tomato Paste (2/3 cup)
,
Coconut Cream (1 can)
, and rinsed
Lentils (1 cup)
. Add boiling
Water (3 cups)
.
Step 5
Stir mixture and bring to a boil.
Step 6
Once boiling, reduce heat to lowest setting. Place top on the pot and allow to simmer for 45 minutes.
Step 7
Switch off heat and give the curry a stir. Garnish with
Fresh Mint (to taste)
