Place a little bit of Vegetable Oil (1 teaspoon) in a large, deep pan over low to medium heat. Add in Yellow Onion (1). Stir occasionally for about 5 minutes.
Add in the Garlic (4 clove). Stir for a few minutes, until aromatic.
Add inDijon Mustard (1 teaspoon), Ground Turmeric (1 teaspoon), Ground Coriander (1/2 teaspoon), Mild Curry Powder (1 teaspoon), Ground Cumin (1 teaspoon), and Salt (to taste). Stir around for about a minute.
Add Tomato Paste (2/3 cup), Coconut Cream (1 can), and rinsed Lentils (1 cup). Add boiling Water (3 cup).
Stir mixture and bring to a boil.
Once boiling, reduce heat to lowest setting. Place top on the pot and allow to simmer for 45 minutes.
Switch off heat and give the curry a stir. Garnish with Fresh Mint (to taste). Enjoy!
