Into a mixing bowl add and mix the
Unsalted Butter (1/2 cup)
Caster Sugar (3/4 cup)
Cream Cheese (3/4 cup)
Next add in the
All-Purpose Flour (3/4 cup)
, and mix everything together.
Then add in 3 Tbsp of juice from
Food Coloring (3)
. Mix everything together until combined.
Into a baking pan lined with baking paper and greased with oil, pour in the lemon batter. Even out the surface, and bake under 350 degrees F (180 degrees C) for about 20 minutes.
While the brownies cool off, proceed to prepare the icing. In a bowl, mix the
Powdered Confectioners Sugar (1 cup)
and the remaining 3 Tbsp of Lemon Juice.
Spread the icing over the surface of the brownie. Sprinkle over with some Lemon Zest, and freeze for about 10 minutes.
Cut into pieces and serve!
