Step 1
Fill a cocktail shaker with ice. Add in Jarred Ginger in Syrup (2 Tbsp) , Fresh Thyme (1 sprig) juice from the Limes (4) and the Hope On Hopkins® Esperanza (2 tots) . Shake to combine.
Step 2
Rub the rim of two tumblers with a little ginger syrup and dip into the Coarse Sea Salt (to taste) .
Step 3
Fill the tumblers with crushed ice and a few pieces of the crystallized ginger from the jar of crystallized ginger and pour over the gin mixture. Garnish with a few extra sprigs of thyme.
Step 4
Serve immediately. Enjoy!
