Cut the Cassava (2) in half, and cover with lightly salted water, simmer slowly until the flesh feels tender when pierced with a small knife. Then, remove from the water, and remove the center string.

Into a bowl, add the Butter (1/3 cup). Rise the cassava to the butter, and season with Garlic Paste (1 Tbsp), Kosher Salt (to taste) and Cayenne Pepper (to taste). Stir well until smooth. The texture should be a bit firmer than mashed potatoes.

Season Chicken Drumsticks (4 lb) of your choice with Kosher Salt (to taste) and Cayenne Pepper (to taste).
