Step 1
Cut the
Cassava (2)
in half, and cover with lightly salted water, simmer slowly until the flesh feels tender when pierced with a small knife. Then, remove from the water, and remove the center string.
Step 2
Into a bowl, add the
Butter (1/3 cup)
. Rise the cassava to the butter, and season with
Garlic Paste (1 Tbsp)
,
Kosher Salt (to taste)
and
Cayenne Pepper (to taste)
. Stir well until smooth. The texture should be a bit firmer than mashed potatoes.
Step 3
Season
Chicken Drumsticks (4 lb)
of your choice with
Kosher Salt (to taste)
and
Cayenne Pepper (to taste)
.
Step 4
Saute the chicken in
Peanut Oil (2 Tbsp)
, until golden on all sides
Step 5
Remove the chicken from the pan and to the same pan add the
Onions (2)
.Saute until translucent
Step 6
Add
Canned Diced Tomatoes (1 1/4 cups)
,
Canned Tomato Purée (1 cup)
,
Peanut Butter (1/3 cup)
,
Hot Chili Peppers (to taste)
,
Garlic Paste (1 Tbsp)
,
Kosher Salt (to taste)
and
Cayenne Pepper (to taste)
. Saute for 3 minutes until bubbly
Step 7
Add in the
Chicken Stock (4 cups)
, and return the chicken to the pan. Simmer the mixture for about 45 minutes.
Step 8
Add in the
Fresh Baby Spinach (9 1/2 cups)
, and simmer for one more minute.
Step 9
Serve together with the foo foo. Enjoy!
