Cooking Instructions

Step 1
In a large mixing bowl, add Self-Rising Flour (1 1/2 cup), Baking Powder (1/2 teaspoon) and Caster Sugar (1/2 cup). Mix together to combine.
Step 2
Add Butter (100 gram). Using your fingers, rub the butter and flour mixture together until it has the texture of breadcrumbs.
Step 3
Add Egg (1) and Milk (1 tablespoon). Using a butter knife, make cutting motions through the mixture until it comes together into a dough.
Step 4
Using a rolling pin, gently roll the dough out on a floured surface, until it is about 1 centimeter thick.
Step 5
Using a fluted cookie cutter, cut out rounds from the dough. Brush the top of each with Milk (to taste).
Step 6
Bake at 180 degrees C (350 degrees F) for 15 minutes, or until golden.
Step 7
Allow to cool for 5-10 minutes before transferring to a wire rack.
Step 8
In a mixing bowl, add Mascarpone Cheese (250 gram), Powdered Confectioners Sugar (1/4 cup) and Vanilla Extract (1 teaspoon). Mix until smooth and creamy.
Step 9
Put a small amount of the mascarpone mixture on half of the cookies. Top with Fresh Strawberry (250 gram) and then another cookie. Dust lightly with Powdered Confectioners Sugar (to taste).
Step 10
Serve and enjoy!
