In a large mixing bowl, add
Self-Rising Flour (1 1/2 cups)
Baking Powder (1/2 tsp)
Caster Sugar (1/2 cup)
. Mix together to combine.
Butter (1/3 cup)
. Using your fingers, rub the butter and flour mixture together until it has the texture of breadcrumbs.
Milk (1 Tbsp)
. Using a butter knife, make cutting motions through the mixture until it comes together into a dough.
Using a rolling pin, gently roll the dough out on a floured surface, until it is about 1 centimeter thick.
Using a fluted cookie cutter, cut out rounds from the dough. Brush the top of each with
Milk (to taste)
Bake at 180 degrees C (350 degrees F) for 15 minutes, or until golden.
Allow to cool for 5-10 minutes before transferring to a wire rack.
In a mixing bowl, add
Mascarpone Cheese (1 cup)
Powdered Confectioners Sugar (1/4 cup)
Vanilla Extract (1 tsp)
. Mix until smooth and creamy.
Put a small amount of the mascarpone mixture on half of the cookies. Top with
Fresh Strawberries (1 2/3 cups)
and then another cookie. Dust lightly with
Powdered Confectioners Sugar (to taste)
