Step 1
Heat a heavy-bottomed pot over medium heat, then add
Butter (2 Tbsp)

Garlic (2 cloves)

All-Purpose Flour (2 Tbsp)
. Stir until fragrant, 30 seconds or so, then add the flour and cook for 2-3 minutes, until a pale blonde color.
Step 2
Stir in the
Taco Seasoning (1 Tbsp)
and
Milk (1 cup)
and continue to stir until thickened.
Step 3
Turn the heat to low and stir in the
Shredded White Cheddar Cheese (4 cups)
. Stir until completely melted into the sauce. Add a splash of milk if it gets too thick.
Step 4
Stir in the
Mild Diced Green Chiles (1 can)
, then stir in
Diced Pimientos (1 jar)
. Heat for 2-3 more minutes to incorporate the flavors.
Step 5
Serve with
Tortilla Chips (to taste)
, garnished with some extra chilies and peppers if desired.
