In the blender or food processor, blend together
Basil Pesto (1/2 cup)
Kale (3 1/3 cups)
Bring a large pot of water to a rolling boil with a generous pinch of
Salt (to taste)
. Once boiling, add
Gnocchi (2 lb)
. Cook for about 3 minutes or according to package directions. Once done, transfer to a large bowl with a slotted spoon. Reserve 1/2 cup of pasta water, just in case you need to loosen the sauce later.
Add kale pesto sauce and
Grated Parmesan Cheese (1/2 cup)
to the bowl with the gnocchi. Mix until combined (make sure to mix gnocchi with pesto while the gnocchi is still hot). If it thickens too much, add a splash of the pasta water to loosen.
Sprinkle more parmesan on top if desired and serve. For a spicy kick, garnish with a few
Crushed Red Pepper Flakes (to taste)
