In the bowl of a stand mixer, add Cream Cheese (375 gram), Caster Sugar (1/3 cup), and Vanilla Extract (2 teaspoon), then beat until smooth. Add in Whipping Cream (1/2 cup) and beat again.
Beat in each Egg (2) separately, then fold in eight of the Oreo® Chocolate Sandwich Cookies (20).
In a muffin pan, place the remaining full Oreo Cookies in the base of each cup. Divide the cheesecake mixture between each cup.
Cook at 160 degrees C (325 degrees F) for 20 minutes or until each is set in the center. Leave in oven with the door slightly ajar to cool.
Chill in the fridge for 3 hours or until completely set.
