Using an electric mixer, mix together the Butter (125 gram) and Brown Sugar (2/3 cup). Then add in the Egg (1), and Maple Syrup (1/4 cup). Mix everything together.
Then add in the All-Purpose Flour (1 cup), Baking Soda (1/2 tablespoon), Ground Cinnamon (2 teaspoon), and Fresh Ginger (1 tablespoon). Mix everything well.
Form the dough into a shape of a disk, and wrap it up with some kitchen wrap. Place it into the fridge for about 1 hour.
Place the dough between two baking papers, and roll it out until it has a thickness of 1/2 centimeters.
Using cookie cutters, cut the dough into small cookies. Bake inside a preheated oven under 180 degrees C (350 degrees F), for about 25 minutes.
