In a mixing jug, add Extra-Virgin Olive Oil (1/2 cup), Lemon (2), Fresh Oregano (1 tablespoon) and Fresh Thyme (1 tablespoon). Season with Salt and Pepper (to taste). Stir together.
In a baking dish, add Chicken Breast (4). Pour the marinade over the chicken. Cover dish in plastic wrap and place in fridge for 3 hours, turning occasionally.
Bake at 200 degrees C (400 degrees F) for 30 minutes, or until the chicken is cooked all the way through.
Serve with Mixed Vegetables (to taste). Enjoy!
