Step 1
Preheat oven to 350 degrees F (180 degrees C) and place muffin liners in the pan.
Step 2
To make the flax egg, combine
Flaxseed Meal (2 Tbsp)
and Hot
Water (1/3 cup)
in a small bowl. Let sit for approximately 5 minutes until gel-like.
Step 3
In a large bowl, stir together
Whole Wheat Flour (2 cups)
,
Baking Soda (1 tsp)
, and
Salt (1/2 tsp)
.
Step 4
In a separate bowl, mash
Bananas (4)
and stir in
Unsweetened Apple Sauce (1/2 cup)
,
Vegan Sugar (1/2 cup)
,
Vegetable Oil (1/2 cup)
, flax egg mixture, and
Pure Vanilla Extract (1 tsp)
.
Step 5
Pour the wet ingredients into the dry ingredients until they are combined. It will be thick. Then, stir in
Cacao Baking Chips (1 cup)
.
Step 6
Use a scoop to place the batter into the muffin liners. You should have 12-15 muffins. Bake for approximately 20 minutes. Muffins are done when you place a toothpick in them and it comes out clean.
Step 7
Allow muffins to cool and enjoy!
