Cooking Instructions

Step 1
In a tagine or heavy-based saucepan, add
Olive Oil (as needed)
. Brown
Beef Chuck (1.5 lb)
in batches and transfer to a bowl as finished.
Step 2
Into the same pan, add
Yellow Onions (2)
. Cook over a medium heat for 3-4 minutes, or until onions have softened.
Step 3
Add
Garlic (2 cloves)
,
Moroccan Seasoning (1/2 Tbsp)
,
Ground Coriander (1/2 Tbsp)
,
Ground Cumin (1 tsp)
and
Orange (1)
. Cook, stirring, for 1 minute.
Step 4
Stir in
Tomato Paste (2 Tbsp)
. Add meat back in.
Step 5
Add
Beef Stock (2 cups)
,
Water (1 cup)
and
Prunes (1 cup)
. Stir through.
Step 6
Bring to a boil, and then reduce to a low temperature. Cover and allow to simmer for 1 hour, or until the beef is tender.
Step 7
Serve with
White Rice (to taste)
. Enjoy!
