Chorizo Pilaf is a no-fuss, easy to make main meal that is perfect for mid-week dinners. Chorizo sausages are sliced and fried, then combined with onion, garlic, red chilli, basmati rice, spices and chicken stock. Simmered until the rice is fluffy, this flavourful dish is as delicious as it is simple to put together - give it a go!

Ground Black Pepper
Take a large saucepan with a little bit of oil, add the
Spanish Chorizo (5)
and cook it for about 5 minutes. Then transfer them into a bowl and set aside. Add a little bit more oil and add
Yellow Onions (2)
Garlic (2 cloves)
Paprika (1/2 Tbsp)
Ground Cumin (1 tsp)
Red Chili Pepper (1)
, and stir together for 2 minutes in medium heat.
Basmati Rice (2 cups)
,stir together and add chorizo again with
Chicken Stock (4 cups)
. Once the mixture is boiling, reduce the heat to medium-low and allow it to simmer with the lid on for 10 minutes. Next take the pot off the stove and leave the lid on, allow it to sit for 5 minutes. Season it with
Salt (1 dash)
Ground Black Pepper (1 dash)
Fresh Parsley (1/2 cup)
. Then stir it. Serve and enjoy!
