Shape Italian Sausage (1 pound) into 9 balls.
Cut Yellow Bell Pepper (1), Green Bell Pepper (1) and Red Bell Pepper (1) into 1-inch pieces and add to Olive Oil (1 tablespoon) in a medium hot pan. Add Tomato Paste (1 tablespoon), Garlic Paste (1 teaspoon), Dried Oregano (1 teaspoon), Kosher Salt (to taste) and Cayenne Pepper (to taste).
Saute for 3 minutes.
Top with the sausage balls and add Unsalted Chicken Stock (1 cup). Bake at 375 degrees F (190 degrees C) until sausage balls are cooked through but not dry, about 20 minutes.
