Author's Notes

I have the 6-qt Instant Pot, which is important only because the size of the pot may affect the timing. These instructions work perfectly for my Instant Pot every time.

Cooking Instructions

Step 1
Into the pot place: Water (1 1/2 cups) , Short Grain Brown Rice (1 cup) and Kosher Salt (1/2 Tbsp) . Set the Instant Pot for 22 minutes, high pressure. Once the 22 minutes is up, let the valve release on its own.
Step 2
Add Scallions (1 bunch) to the pot along with Soy Sauce (1 Tbsp) , Sesame Oil (1/2 Tbsp) and Mirin (1 tsp) . Mix them together until combined.
Step 3
Drizzle with Sriracha (to taste) if desired and dig in!
