Perfect Instant Pot Brown Rice with Sesame-Soy Dressing
This recipe will give you the perfect brown rice. You can stop there and serve it plain, but I highly recommend tossing it with the light sesame-soy dressing, which takes it to the next level and makes this rice the perfect side dish!

Cooking Instructions

Into the pot place: Water (1 1/2 cups), Short Grain Brown Rice (1 cup) and Kosher Salt (2 tsp). Set the Instant Pot for 22 minutes, high pressure. Once the 22 minutes is up, let the valve release on its own.

Add Scallions (1 bunch) to the pot along with Soy Sauce (1 Tbsp), Sesame Oil (2 tsp) and Mirin (1 tsp). Mix them together until combined.

Drizzle with Sriracha (to taste) if desired and dig in!
Author's Notes
I have the 6-qt Instant Pot, which is important only because the size of the pot may affect the timing. These instructions work perfectly for my Instant Pot every time.
