Step 1
Preheat oven to 350 degrees F (180 degrees C).
Step 2
In a mixing bowl, add Butter (3/4 cup) , Caster Sugar (1/2 cup) and Vanilla Extract (1 tsp) . Using an electric mixer, beat together until fluffy.
Step 3
Add Eggs (2) and beat again.
Step 4
Add Self-Rising Flour (1 1/4 cups) and Milk (1/4 cup) . With a spoon, mix together until smooth.
Step 5
Transfer 2 tablespoons of batter into each hole of a 12-hole muffin tin lined with cupcake cases.
Step 6
Bake at 350 degrees F (180 degrees C) for 15 minutes, or until the cupcakes have risen and are light golden.
Step 7
Leave cupcakes in the tray to cool for 5 minutes before transferring to a wire rack.
Step 8
In a mixing bowl, add Butter (1/3 cup) , Vanilla Extract (1 tsp) and Powdered Confectioners Sugar (1 cup) . Using an electric mixer, beat together until smooth.
Step 9
Add Red Food Coloring (2 dashes) and mix in with a spoon.
Step 10
Spread the icing onto the cupcakes. Enjoy!
