Preheat oven to 350 degrees F (180 degrees C).
In a mixing bowl, add Butter (175 gram), Caster Sugar (1/2 cup) and Vanilla Extract (1 teaspoon). Using an electric mixer, beat together until fluffy.
Add Egg (2) and beat again.
Add Self-Rising Flour (1 1/4 cup) and Milk (1/4 cup). With a spoon, mix together until smooth.
Transfer 2 tablespoons of batter into each hole of a 12-hole muffin tin lined with cupcake cases.
Bake at 350 degrees F (180 degrees C) for 15 minutes, or until the cupcakes have risen and are light golden.
Leave cupcakes in the tray to cool for 5 minutes before transferring to a wire rack.
In a mixing bowl, add Butter (2.7 ounce), Vanilla Extract (1 teaspoon) and Powdered Confectioners Sugar (1 cup). Using an electric mixer, beat together until smooth.
Add Red Food Coloring (2 dash) and mix in with a spoon.
Spread the icing onto the cupcakes. Enjoy!
