Place Chickpeas (1 can) in a medium bowl and mash them using the back of a fork or potato masher, leaving some chunks of peas.
Slice Avocado (1) and scoop it out using a large spoon into a small bowl. Squeeze the juice of the Lime (1) over the avocado and mash using the back of a fork and add the mashed avocado to the chickpeas.
Add in the Red Onion (1/2 cup), Jalapeño Pepper (1/2 cup), and Fresh Cilantro (2 tablespoon). Stir to combine. Season with Salt and Pepper (to taste).
For sandwiches, pile salad onto Whole Wheat Bread (8 slice) and top with Tomato (to taste) and Cucumber (to taste) or topping of your choice.
For a salad, place Salad Greens (to taste) on a plate and place a scoop of chickpea salad on top of the greens.
