Step 1
Place
Chickpeas (1 can)
in a medium bowl and mash them using the back of a fork or potato masher, leaving some chunks of peas.
Step 2
Slice
Avocado (1)
and scoop it out using a large spoon into a small bowl. Squeeze the juice of the
Lime (1)
over the avocado and mash using the back of a fork and add the mashed avocado to the chickpeas.
Step 3
Add in the
Red Onions (1/2 cup)
,
Jalapeño Peppers (1/2 cup)
, and
Fresh Cilantro (2 Tbsp)
. Stir to combine. Season with
Salt (to taste)
and
Ground Black Pepper (to taste)
.
Step 4
For sandwiches, pile salad onto
Whole Wheat Bread (8 slices)
and top with
Tomatoes (to taste)
and
Cucumbers (to taste)
or topping of your choice.
Step 5
For a salad, place
Salad Greens (to taste)
on a plate and place a scoop of chickpea salad on top of the greens.
