Step 1
Heat a skillet filled halfway up with
Frying Oil (as needed)
. If the oil starts to bubble on the side, it is at the right temperature.
Step 2
In a bowl, whisk together the
All-Purpose Flour (2 1/4 cups)
,
Baking Powder (1 Tbsp)
,
Granulated Sugar (1/4 cup)
, and
Salt (1/2 tsp)
. Set aside.
Step 3
In a separate jug, combine the
Milk (1 2/3 cups)
,
Vanilla Extract (1 tsp)
, and
Eggs (2)
and whisk to combine. Pour the milk mixture into the flour mixture, and mix until there are no lumps.
Step 4
Pour some of the cake batter into a funnel and drizzle it in a round pattern in the hot pan. Cook the funnel cake for about 1-2 minutes, then flip.
Step 5
Cook for another 1-2 minutes, or until golden brown.
Step 6
Drain the funnel cakes and dust with
Powdered Confectioners Sugar (to taste)
or your favorite toppings. Serve and enjoy!
