Heat a skillet filled halfway up with Frying Oil (to taste). If the oil starts to bubble on the side, it is at the right temperature.
In a bowl, whisk together the All-Purpose Flour (2 1/4 cup), Baking Powder (2 1/2 teaspoon), Granulated Sugar (1/4 cup), and Salt (1/2 teaspoon). Set aside.
In a separate jug, combine the Milk (1 2/3 cup), Vanilla Extract (1 teaspoon), and Egg (2) and whisk to combine. Pour the milk mixture into the flour mixture, and mix until there are no lumps.
Pour some of the cake batter into a funnel and drizzle it in a round pattern in the hot pan. Cook the funnel cake for about 1-2 minutes, then flip.
Cook for another 1-2 minutes, or until golden brown.
Drain the funnel cakes and dust with Powdered Confectioners Sugar (to taste) or your favorite toppings. Serve and enjoy!
