Preheat oven to 350 degrees F (180 degrees C)
In a mixing bowl, add
Granulated Sugar (1 2/3 cups)
Unsweetened Cocoa Powder (1/4 cup)
All-Purpose Flour (2 1/2 cups)
Salt (1/2 tsp)
Baking Powder (1 tsp)
Baking Soda (1 tsp)
. Whisk until combined.
In a mixing jug, add
Buttermilk (1 cup)
Vegetable Oil (3/4 cup)
Large Eggs (2)
Vanilla Extract (1/2 Tbsp)
Red Food Coloring (1/4 cup)
Distilled White Vinegar (1 tsp)
. Stir until well incorporated.
Combine wet and dry ingredients. Mix until smooth.
Divide batter evenly between two lightly greased 8-inch cake pans. Smooth out the top. Bake for 25-30 minutes.
In a stand mixer, beat
Cream Cheese (1 cup)
Powdered Confectioners Sugar (4 cups)
Butter (1/4 cup)
Vanilla Extract (1 tsp)
. Mix on low until well incorporated. Increase speed to medium until frosting thickens. Store in fridge until ready to use.
After cake has cooled completely, spread frosting over the first layer.
Place the second layer of cake on top and cover with frosting again.
Spread frosting along the sides as well.
Slice to serve, and enjoy!
