Step 1
Preheat oven to 350 degrees F (180 degrees C)
Step 2
In a mixing bowl, add Granulated Sugar (1 2/3 cups) , Unsweetened Cocoa Powder (1/4 cup) , All-Purpose Flour (2 1/2 cups) , Salt (1/2 tsp) , Baking Powder (1 tsp) , and Baking Soda (1 tsp) . Whisk until combined.
Step 3
In a mixing jug, add Buttermilk (1 cup) , Vegetable Oil (3/4 cup) , Large Eggs (2) , Vanilla Extract (1/2 Tbsp) , Red Food Coloring (1/4 cup) , and Distilled White Vinegar (1 tsp) . Stir until well incorporated.
Step 4
Combine wet and dry ingredients. Mix until smooth.
Step 5
Divide batter evenly between two lightly greased 8-inch cake pans. Smooth out the top. Bake for 25-30 minutes.
Step 6
In a stand mixer, beat Cream Cheese (1 cup) until smooth.
Step 7
Add Powdered Confectioners Sugar (4 cups) , Butter (1/4 cup) , and Vanilla Extract (1 tsp) . Mix on low until well incorporated. Increase speed to medium until frosting thickens. Store in fridge until ready to use.
Step 8
After cake has cooled completely, spread frosting over the first layer.
Step 9
Place the second layer of cake on top and cover with frosting again.
Step 10
Spread frosting along the sides as well.
Step 11
Slice to serve, and enjoy!
