Preheat oven to 400 degrees F (200 degrees C). Grease ramekins or any oven-safe mugs that you have.
Melt Semi-Sweet Chocolate Chips (1 cup) and Butter (1/2 cup). Add Instant Coffee (1/2 teaspoon) and Salt (1 pinch), and whisk until the salt is dissolved. Allow to cool.
In the bowl of a stand mixer, add whole Egg (3), 3 egg yolks, Granulated Sugar (1/2 cup), and Vanilla Extract (1 teaspoon). Beat until mixture reaches a pale yellow color, about 4 minutes.
Turn the speed to low. Add the chocolate mixture to the egg mixture and mix until everything is combined. Gently fold in the All-Purpose Flour (1/2 cup).
Fill each ramekin with lava cake batter, about 2/3 of the way up. Bake them for 10-12 minutes.
Allow cakes to cool. Serve alone or with vanilla ice cream. Enjoy!
