Step 1
Preheat oven to 400 degrees F (200 degrees C). Grease ramekins or any oven-safe mugs that you have.
Step 2
Melt
Semi-Sweet Chocolate Chips (1 cup)
and
Butter (1/2 cup)
. Add
Instant Coffee (1/2 tsp)
and
Salt (1 pinch)
, and whisk until the salt is dissolved. Allow to cool.
Step 3
In the bowl of a stand mixer, add whole
Eggs (3)
, 3 egg yolks,
Granulated Sugar (1/2 cup)
, and
Vanilla Extract (1 tsp)
. Beat until mixture reaches a pale yellow color, about 4 minutes.
Step 4
Turn the speed to low. Add the chocolate mixture to the egg mixture and mix until everything is combined. Gently fold in the
All-Purpose Flour (1/2 cup)
.
Step 5
Fill each ramekin with lava cake batter, about 2/3 of the way up. Bake them for 10-12 minutes.
Step 6
Allow cakes to cool. Serve alone or with vanilla ice cream. Enjoy!
