Beat together Yogurt (1/2 cup) with a little water. Add Salt (to taste).

Boil the Potatoes (2) in a pressure cooker.

Peel and mash potatoes and finely chop Fresh Spinach (7 oz)

Mix spinach, mashed potatoes, Breadcrumbs (2 cups), Ginger Paste (as needed), Salt (to taste), and Lemon Juice (to taste) together.

Form a ball about size of a walnut.

Cover in breadcrumbs.

Heat oil in a deep fryer or a wok ver high heat.

Fry croquette until golden brown. Remove with a slotted spoon and drain on kitchen paper.
