Step 1
Beat together
Yogurt (1/2 cup)
with a little water. Add

Boil the
Potatoes (2)
in a pressure cooker.
Step 3
Peel and mash potatoes and finely chop
Fresh Spinach (6 2/3 cups)
Step 4
Mix spinach, mashed potatoes,
Breadcrumbs (2 cups)

Ginger Paste (1/2 tsp)
,
Salt (to taste)
, and
Lemon Juice (to taste)
together.
Step 5
Form a ball about size of a walnut.
Step 6
Cover in breadcrumbs.
Step 7
Heat oil in a deep fryer or a wok ver high heat.
Step 8
Fry croquette until golden brown. Remove with a slotted spoon and drain on kitchen paper.
Step 9
Sprinkle with chaat masala or yogurt dip just made or green chutney.
