Mix All-Purpose Flour (1 1/2 cup), Baking Powder (1 1/3 tablespoon), Salt (1/2 teaspoon), Granulated Sugar (1 tablespoon), and Pumpkin Pie Spice (1/2 teaspoon) in a bowl.
Make a well in the center and add the Egg (1), Canned Pumpkin Purée (2 tablespoon), Butter (2 tablespoon), and Milk (1 cup). Stir until the batter forms.
Heat a small amount of butter into a pan over medium heat and spoon out your pancakes. Cook about 2-3 minutes on one side or until bubbles form.
Flip and cook on the other side for 2-3 minutes.
Sprinkle with Powdered Confectioners Sugar (to taste) and Ground Cinnamon (to taste) before serving.
