Step 1
Mix All-Purpose Flour (1 1/2 cups) , Baking Powder (1 Tbsp) , Salt (1/2 tsp) , Granulated Sugar (1 Tbsp) , and Pumpkin Pie Spice (1/2 tsp) in a bowl.
Step 2
Make a well in the center and add the Egg (1) , Canned Pumpkin Purée (2 Tbsp) , Butter (2 Tbsp) , and Milk (1 cup) . Stir until the batter forms.
Step 3
Heat a small amount of butter into a pan over medium heat and spoon out your pancakes. Cook about 2-3 minutes on one side or until bubbles form.
Step 4
Flip and cook on the other side for 2-3 minutes.
Step 5
Sprinkle with Powdered Confectioners Sugar (to taste) and Ground Cinnamon (to taste) before serving.
