Blueberry Almond Breakfast Bars

Bananas , overripe

Old Fashioned Rolled Oats

1/2 cup

Unsweetened Apple Sauce

•

1/2 tsp

Simply Organic Cinnamon, Ground

•

1/2 tsp

Almond Extract

•

1/4 tsp

Kosher Salt

4 Tbsp

Honey

•

1 cup

Fresh Blueberries

•

1/2 cup

Slivered Almonds , toasted

•

2 Tbsp

Coconut Oil , melted

Cooking Instructions

Preheat oven to 350 degrees F (180 degrees C).

In a standing electric mixer with the paddle attachment, mash the Banana (3). Add the Unsweetened Apple Sauce (1/2 cup), Honey (1/4 cup), Almond Extract (1/2 teaspoon), Ground Cinnamon (1/2 teaspoon), and Kosher Salt (1/4 teaspoon). Mix to combine. This can also be done by hand.

Add the Old Fashioned Rolled Oats (3 cup) and mix until well combined. Using a rubber spatula, fold in the Fresh Blueberry (1 cup) and Slivered Almonds (1/2 cup). Taste for sweetness/salt and adjust as necessary.

Coat a 9x13 baking pan with the Coconut Oil (2 tablespoon). Press mix into pan. Bake for 35 minutes or until edges are brown.

Cut into squares or bars and serve with yogurt! Enjoy!
