Preheat oven to 350 degrees F (175 degrees C).
Cook Penne Pasta (1 box) according to packaging instructions.
Over medium heat, saute the Onion (1), Carrot (2), and Celery (2 stalk) in Olive Oil (to taste).
Once the vegetables are soft and your noodles are finished, toss together with the Chicken (2 cup).
In a microwave-safe bowl, add your Laughing Cow Swiss Cheese Wedges (1 package) and Light Sour Cream (8 ounce). Mix and microwave for 30 seconds. Mix once again and add in the Frank's® RedHot® Buffalo Sauce (to taste).
Mix your sauce into the pasta. Top with Shredded Light Mozzarella Cheese (2 cup) and bake for 20 minutes, or until the cheese is melted.
Garnish with Scallion (1/2 cup) and serve. Enjoy!
