Cooking Instructions
1.
Take your Bacon (12 slices) and cut the slices in half. To assemble your moink balls, wrap the bacon around the Meatballs (4 1/2 cups) and use a toothpick to hold the bacon in place.

Season with Barbecue Rub (to taste).

Get your smoker or grill set at 275 degrees F (140 degrees C) and place these bacon-wrapped meatballs on the cooker. Cook until the bacon has a great, mahogany color, about 1 – 1.5 hours. Check them after 45 minutes to keep an eye on the color and turn them if needed.
4.
Once the Moink Balls have the color you want, apply your glaze. Mix Barbecue Sauce (to taste) and Apple Jelly (to taste). Dip each Moink Ball in the glaze and cook for 10 – 15 more minutes to allow that sauce to set.
5.
Once glazed, remove from the cooker and serve.
