Wash and pat dry Cornish Game Hen (1).
Cut through back of the hen and season with Kosher Salt (to taste). For a formal dinner, remove back bone and wing tips.
Grill poultry on both sides, then finish by roasting in a 375 degrees F (190 degrees C) oven until about 3/4 cooked. This will take about 20-25 minutes for a small hen and longer for a chicken, depending on size.
Saute Onion (4 ounce) and Linguiça Sausage (4 ounce) in Olive Oil (2 tablespoon).
When the onions are translucent, add Assorted Color Bell Peppers (1 cup) and saute for 1 minute.
Add White Rice (4 cup) and Garlic Paste (1 tablespoon), then season with more kosher salt and Cayenne Pepper (to taste).
Saute until the rice “pops," then move the rice to one side of the pan and add Olive Oil (2 tablespoon). Scramble Egg (4) until set.
Mix the eggs with the other ingredients and saute until the eggs are dry.
Check and adjust seasonings. To serve, top with Black Olives (to taste).
When the poultry is about 3/4 cooked, brush generously with Piri Piri Chilli (to taste) and Lemon (1 tablespoon). Return to oven. Repeat this step every 5 minutes until poultry is cooked through.
