Put the Lemongrass (4 stalk) in a food processor or blender. Add Ground Coriander (1 teaspoon), Ground Cumin (1/2 teaspoon), Ground Turmeric (1 tablespoon), Galangal Powder (2 teaspoon), Brown Sugar (4 tablespoon), Salt (1 teaspoon), Shallot (4), Garlic (3 clove), Soy Sauce (2 tablespoon), Cooking Oil (3 tablespoon) and Water (1/4 cup). Blend until smooth.
Pour the marinade over the Boneless, Skinless Chicken Thigh (8) and gently massage it into the meat.
Put a plastic wrap over the chicken and let it sit in the fridge for at least 2 hours, up to overnight.
Grill or pan-fry the chicken. It should only take about 2 minutes on each side over medium-high heat.
Now it’s time to assemble the burger! Place the grilled satay chicken on the bottom Hamburger Bun (8), Red Onion (1), and Cucumber (1). Smear with Spicy Peanut Satay Sauce.
