Author's Notes

This recipe makes just enough to fill one 9-by-5-Inch Loaf Pan. I’ve tried using silicone loaf pans and even stoneware, but I find that the metal loaf pans work best for this bread. Non-stick or plain works just fine.

Preheat the oven to 350 degrees F (180 degrees C). Grease your loaf and sprinkle about a tablespoon of flour evenly on it.

Mix All-Purpose Flour (2 cups), Baking Powder (1/2 Tbsp), Baking Soda (1 tsp) and Salt (1 pinch) in one bowl.

Mix Eggs (2), Butter (1/2 cup), Vanilla Extract (1 tsp), Milk (3 Tbsp), the juice from Lemon (1), Banana (1 cup), and Caster Sugar (1 cup) in another.

Slowly pour the dry ingredients into the wet mixture. Combine but don’t over-stir. Pour the batter into the prepared loaf pan and bake for one hour.
