I’m pretty sure some sort of pixie flew in my window last weekend and inspired me to make the most decadent pancakes. What may be the best thing about these pancakes other than the fact that they’re delicious, is that they are relatively guilt-free. Full of whole grains, protein, and bananas.

Whole Wheat Pastry Flour

Banana , overripe, mashed

Egg Replacer
1/4 cup
Peanut Butter
1 tsp
Baking Powder
1 tsp
Ground Cinnamon
1 cup
Unsweetened Almond Milk
1 1/2 Tbsp
Peanut Butter
1/2 Tbsp
Unsweetened Almond Milk

Directions

Step 1
Mash the Banana (1) with a fork until it is broken up a bit.
Step 2
In one bowl, mix the dry ingredients: Whole Wheat Pastry Flour (1 cup) , Old Fashioned Rolled Oats (1/2 cup) , Baking Powder (1 tsp) and Ground Cinnamon (1 tsp) .
Step 3
In a separate bowl, mix the wet ingredients: Egg Replacer (1) , Peanut Butter (1/4 cup) , Vanilla Extract (1 tsp) , mashed banana, Maple Syrup (2 Tbsp) and Unsweetened Almond Milk (1 cup) .
Step 4
Add the wet ingredients into the dry and mix well. You may have to mix for a while to get the peanut better to incorporate well.
Step 5
Add about 1/4 cup of the batter to a lightly greased griddle or skillet over medium heat. Cook on one side until the batter starts to bubble. Flip, and cook the other side until the cake is cooked through.
Step 6
While your pancakes are cooking, prepare the Magic Sauce. Melt the Peanut Butter (1 1/2 Tbsp) by microwaving for about 30 seconds. Add the remaining Maple Syrup (2 Tbsp) and Unsweetened Almond Milk (1/2 Tbsp) and whisk until fully incorporated.
Step 7
Top the pancakes with fresh slices of banana and drizzle the sauce on top. Prepare to be wowed.
