Preheat the oven to 350 degrees F (180 degrees C). Line a couple of baking sheets with foil, parchment paper, or silicone baking mats for easy clean-up. Set aside.
Shred the Carrot (1 cup).
In a large bowl, mix together Old Fashioned Rolled Oats (2 cup), shredded carrot, Unsalted Raw Pecans (1 cup), Raw Walnuts (1 cup), Unsweetened Coconut Flakes (1/2 cup), Raisins (1/2 cup), Maple Syrup (1/4 cup), Coconut Oil (1/4 cup), Ground Cinnamon (1 teaspoon), Salt (1/2 teaspoon), Ground Ginger (1/4 teaspoon), Chia Seeds (1/4 teaspoon), Ground Nutmeg (1/8 teaspoon), and Ground Cloves (1 pinch)
Mix together all of the ingredients until everything is evenly coated with coconut oil, spices, and syrup.
Divide the mixture evenly between the two baking sheets and spread out.
Place the baking sheets into the oven to bake for about 20-25 minutes, stirring halfway through the baking time. Once done, remove from the oven and allow to cool completely.
Enjoy or store in an air-tight container for 5-7 days.
