Step 1
Preheat the oven to 350 degrees F (180 degrees C). Line a couple of baking sheets with foil, parchment paper, or silicone baking mats for easy clean-up. Set aside.
Step 2
Shred the Carrots (1 cup) .
Step 3
In a large bowl, mix together Old Fashioned Rolled Oats (2 cups) , shredded carrot, Unsalted Raw Pecans (1 cup) , Raw Walnuts (1 cup) , Unsweetened Coconut Flakes (1/2 cup) , Raisins (1/2 cup) , Maple Syrup (1/4 cup) , Coconut Oil (1/4 cup) , Ground Cinnamon (1 tsp) , Salt (1/2 tsp) , Ground Ginger (1/4 tsp) , Chia Seeds (1/4 tsp) , Ground Nutmeg (1/8 tsp) , and Ground Cloves (1 pinch)
Step 4
Mix together all of the ingredients until everything is evenly coated with coconut oil, spices, and syrup.
Step 5
Divide the mixture evenly between the two baking sheets and spread out.
Step 6
Place the baking sheets into the oven to bake for about 20-25 minutes, stirring halfway through the baking time. Once done, remove from the oven and allow to cool completely.
Step 7
Enjoy or store in an air-tight container for 5-7 days.
