Though I wish to cater to all kinds of palates, you’ll chiefly find the Indian cuisine here wherein the Malabari (North Kerala) style will predominate as that’s where my roots, trunk and branches are.

Step 1
Grease a tray with ghee or line it with an aluminum foil and keep aside. Put the Chickpea Flour (1 cup) to a bowl and add 1 Tbsp of Ghee to it. Mix it well and sieve it. Put this to a pan and dry roast it for 4 to 5 minutes over medium flame, until you can smell the nutty aroma of the chickpea. Keep it aside.
Step 2
Melt the Ghee (3/4 cup) and pour it in a microwave-safe bowl. Add Powdered Confectioners Sugar (1 cup). Mix well then add the toasted flour. Continue to mix - make sure there are no lumps.
Step 3
Cook it in the Panasonic Microwave Oven. Microwave for one minute in high power and take it out. Mix well and place it back to microwave for 1 more minute. Take it out mix well and then microwave again for another minute. Repeat the process until the mixture becomes foamy and airy. It's important to achieve the correct texture. Else it might crumble or might not harden.
Step 4
Mix well and pour it to the prepared tray. Please be careful as the bowl will be very hot. Allow it to cool well and set. Once the mixture becomes cool you can keep in the fridge for some time. Once completely cooled and well set take it out and using a sharp knife cut it to pieces. Serve as a dessert or snack. Cooking results may vary depending on microwave oven used.
