The fries can be refrigerated for up to 3 days.

Reheating: Place the wedges in a single layer on a foil-lined sheet pan. Bake at 375 degrees F (190 degrees C) until the fries are hot and crispy, about 10 to 20 minutes. For extra crispy fries, they can be broiled, but keep a close eye as they can burn quickly.
