Step 1
Preheat the oven to 375 degrees F (190 degrees C).
Step 2
Spread the Tyson® Chicken Thighs (1.5 lb) out in the bottom of a 9x13" baking dish. Drizzle with Olive Oil (1 Tbsp) , sprinkle with Salt (to taste) , and Ground Black Pepper (to taste) .
Step 3
Spread the Fresh Baby Spinach (3 cups) over the top of the chicken.
Step 4
In a bowl, combine the Artichoke Hearts (1) , Tomatoes (2) , Red Onion (1) , Kalamata Olives (1/4 cup) , Greek Seasoning (1/2 Tbsp) , and Olive Oil (2 Tbsp) . Stir gently until mixed well.
Step 5
Spread the contents of the bowl including all the juices left in the bowl on the top of the spinach. Sprinkle with the Crumbled Feta Cheese (2 Tbsp) .
Step 6
Bake in the oven for 40 minutes.
Step 7
Serve this over rice but you can serve it over potatoes, quinoa, couscous or even orzo. Enjoy!
