Preheat the oven to 375 degrees F (190 degrees C).
Spread the Boneless, Skinless Chicken Thigh (1.5 pound) out in the bottom of a 9x13" baking dish. Drizzle with Olive Oil (1 tablespoon), sprinkle with Salt (to taste), and Ground Black Pepper (to taste).
Spread the Fresh Baby Spinach (3 cup) over the top of the chicken.
In a bowl, combine the Artichoke Hearts (1), Tomato (2), Red Onion (1), Kalamata Olives (1/4 cup), Greek Seasoning (2 teaspoon), and Olive Oil (2 tablespoon). Stir gently until mixed well.
Spread the contents of the bowl including all the juices left in the bowl on the top of the spinach. Sprinkle with the Crumbled Feta Cheese (2 tablespoon).
Bake in the oven for 40 minutes.
Serve this over rice but you can serve it over potatoes, quinoa, couscous or even orzo. Enjoy!
