Baked Greek Chicken is so flavorful and so easy. I love that it all comes together to bake in one dish and made with quintessential Greek flavors we know and love. I prefer to serve this over rice but you can serve it over potatoes, quinoa, cous cous or even orzo would be delicious.

Cooking Instructions

Step 1
Preheat the oven to 375 degrees F (190 degrees C).
Step 2
Spread the Boneless, Skinless Chicken Thigh (1.5 pound) out in the bottom of a 9x13" baking dish. Drizzle with Olive Oil (1 tablespoon), sprinkle with Salt (to taste), and Ground Black Pepper (to taste).
Step 3
Spread the Fresh Baby Spinach (3 cup) over the top of the chicken.
Step 4
In a bowl, combine the Artichoke Hearts (1), Tomato (2), Red Onion (1), Kalamata Olives (1/4 cup), Greek Seasoning (2 teaspoon), and Olive Oil (2 tablespoon). Stir gently until mixed well.
Step 5
Spread the contents of the bowl including all the juices left in the bowl on the top of the spinach. Sprinkle with the Crumbled Feta Cheese (2 tablespoon).
Step 6
Bake in the oven for 40 minutes.
Step 7
Serve this over rice but you can serve it over potatoes, quinoa, couscous or even orzo. Enjoy!
