Baked Greek Chicken

Baked Greek Chicken is so flavorful and so easy. I love that it all comes together to bake in one dish and made with quintessential Greek flavors we know and love. I prefer to serve this over rice but you can serve it over potatoes, quinoa, cous cous or even orzo would be delicious.

Boneless, Skinless Chicken Thighs , cut

Tomatoes , cut, deseeded

Artichoke Hearts , drained

•

Red Onion , cut

Fresh Baby Spinach

4 Tbsp

Kalamata Olives , pitted

2 tsp

Greek Seasoning

3 Tbsp

Olive Oil

Ground Black Pepper

Crumbled Feta Cheese

Cooking Instructions

Preheat the oven to 375 degrees F (190 degrees C).

Spread the Boneless, Skinless Chicken Thighs (1.5 lb) out in the bottom of a 9x13" baking dish. Drizzle with Olive Oil (1 Tbsp) , sprinkle with Salt (to taste) , and Ground Black Pepper (to taste) .

Spread the Fresh Baby Spinach (3 cups) over the top of the chicken.

In a bowl, combine the Artichoke Hearts (1) , Tomatoes (2) , Red Onion (1) , Kalamata Olives (4 Tbsp) , Greek Seasoning (2 tsp) , and Olive Oil (2 Tbsp) . Stir gently until mixed well.

Spread the contents of the bowl including all the juices left in the bowl on the top of the spinach. Sprinkle with the Crumbled Feta Cheese (2 Tbsp) .

Bake in the oven for 40 minutes.

Serve this over rice but you can serve it over potatoes, quinoa, couscous or even orzo. Enjoy!
