Step 1
Preheat the oven to 350 degrees F (180 degrees C).

Heat
Olive Oil (1 Tbsp)
in a pan over medium heat.

Add the
Yellow Onions (2 cups)

Salt (to taste)
. Mix and cook for about 7 minutes.

Add
Garlic (4 cloves)
and cook for another 2 minutes.
Step 5
Add the
Vegetable Broth (3 Tbsp)

Brown Lentils (2 cups)

Dried Oregano (1 Tbsp)

Dried Thyme (1 tsp)
,
Dried Sage (1/2 tsp)
,
Salt (to taste)
, and
Ground Black Pepper (to taste)
and cook for 5 minutes more stirring occasionally.
Step 6
In a large bowl, add the lentil mix,
Breadcrumbs (1 1/4 cups)
,
Walnuts (1 1/2 cups)
,
Ground Flaxseed (1 Tbsp)
mixture, and
Tomato Paste (1/2 cup)
. Mix thoroughly using a masher or your hands.
Step 7
Flatten the contents of the bowl into a loaf pan.
Step 8
Make the glaze by mixing the
Ketchup (1/3 cup)
,
Balsamic Vinegar (2 Tbsp)
, and
Maple Syrup (1 Tbsp)
together.
Step 9
Evenly spread glaze on the top of the loaf.
Step 10
Cover with the loaf pan with tinfoil and bake at 350 degrees F (180 degrees C) for 50-60 minutes.
