These are the best vegan taquitos ever! These rolled corn tortillas filled with refried beans and vegan cheese are baked until crisp and make the perfect party snack. Serve as an appetizer or side dish with salsa and guacamole during game day, or serve as main course. These vegan taquitos are a quick and easy go to snack!

Refried Beans
1 1/2 cups
Vegan Nacho Cheese Sauce
to taste
1/2 cup
Vegan Sour Cream
1/4 cup
Salsa
1
Jalapeño Pepper , deseeded, finely chopped

Small Red Onion , finely chopped
1/4 cup
Cherry Tomatoes , finely chopped
1 handful
Fresh Cilantro , finely chopped

Directions

Step 1
Preheat oven to 350 degrees F (175 degrees C).
Step 2
Grease a large baking sheet generously with Olive Oil (to taste) . Set aside.
Step 3
Heat Small Flour Tortillas (20) for 10 seconds in the microwave to soften them.
Step 4
Spoon roughly 1 Tbsp of Refried Beans (1 1/2 cups) onto the middle of the tortilla. Spread across the middle lengthwise.
Step 5
Spoon roughly 1 Tbsp of Vegan Nacho Cheese Sauce (1 1/2 cups) onto the beans and spread in the same fashion.
Step 6
Roll tightly and secure with a toothpick and place on baking sheet seam side down.
Step 7
Repeat process until all tortillas are filled, rolled, secured and placed on the baking sheet.
Step 8
Brush the tops of the taquitos with Olive Oil (to taste) and sprinkle with some Sea Salt (to taste) .
Step 9
Bake in oven for 15, flip and bake for another 5 minutes, until edges of the taquitos are slightly browned.
Step 10
While the taquitos are cooking, prepare the salsa to dip. Stir together Vegan Sour Cream (1/2 cup) , Salsa (1/4 cup) , and Jalapeño Pepper (1) in a small bowl.
Step 11
Then prepare guacamole as another dip. Cut the Avocados (2) in half. Remove seed. Scoop out the flesh with a spoon and place into a small-medium size bowl. Mash the avocado with a fork.
Step 12
Add Red Onion (1/4) , Cherry Tomatoes (1/4 cup) , Fresh Cilantro (1 handful) , and jalapēno if using and mix to combine. Add Lime (1) juice and Sea Salt (1 pinch) .
Step 13
Enjoy baked taquitos with dips.
