Heat a large, non stick frying pan over a medium heat. Add in the Olive Oil (1 Tbsp), swill around the pan a little then throw in Sweet Potato (1). Cook for 2 – 3 minutes.

Add in Red Chili Pepper (1/2) and a good helping of Salt (to taste) and Ground Black Pepper (to taste). Give it all a stir, if you need to add a little more oil that’s fine. Pop the lid on and cook for 3 minutes. Next, add in the Scallion (1 bunch) and Garlic (1 clove).
