Sweet Potato Breakfast Hash

Ok, first thing in the morning, I am a bit like a cave woman. ‘Grunt grunt ug’ and all that. I don’t want to deal with anyone or anything too challenging. But a little bit of chopping and a little bit of frying? Yeah, I think can cope with that! Especially when it tastes as amazing as this sweet potato breakfast hash! It’s super quick, super healthy and a fantastic way to start your day.

Ingredients
- Serves 2 +

1 tablespoon Olive Oil
1/2 chopped, deseeded Red Pepper
to taste Salt and Pepper
2 sliced Scallion

STEP 1
Heat a large, non stick frying pan over a medium heat. Add in the Olive Oil (1 tablespoon), swill around the pan a little then throw in Sweet Potato (1). Cook for 2 – 3 minutes.
STEP 2
Add in Red Pepper (1/2) and a good helping of Salt and Pepper (to taste). Give it all a stir, if you need to add a little more oil that’s fine. Pop the lid on and cook for 3 minutes. Next, add in the Scallion (2) and Garlic (1 clove).
STEP 3
Give it another stir then make 2 wells and crack an Egg (2) into each one. Reduce the heat to low. Pop the lid back on and cook for 3 – 4 minutes until the egg whites are cooked but the yolks are still runny.
STEP 4
Immediately divide between 2 plates and fill your face!
