Step 1
In a medium size bowl add the
Canned Chickpeas (1 cup)

Cucumbers (1 cup)

Avocados (1 cup)

Tomatoes (1/2 cup)

Fresh Basil (1 Tbsp)

Step 2
In another small bowl mix the dressing, add the juice from
Lemon (1)

Olive Oil (1/2 Tbsp)
,
Fresh Parsley (1 Tbsp)
,
Ground Black Pepper (1/4 tsp)
, and
Salt (to taste)
. Pour over the top of the vegetable mixture.
Step 3
Top up with
Dried Oregano (3/4 tsp)
. Lightly toss to combine. Cover the bowl with cling wrap and refrigerate it for a 1 day.
