Step 1
Prepare smoker or grill for indirect cooking at 350 degrees F (180 degrees C).
Step 2
In a medium size iron skillet add melted
Butter (1/2 stick)
. Swirl the skillet so the butter costs the sides and bottom evenly. Sprinkle
Brown Sugar (3/4 cup)
around the bottom of skillet.
Step 3
Arrange
Pineapple Slices in Juice (1 can)
in a single layer and place
Maraschino Cherries (1 jar)
in the center of each ring.
Step 4
In a large mixing bowl combine the
All-Purpose Flour (1 1/2 cups)
,
Granulated Sugar (1 cup)
,
Baking Powder (1 Tbsp)
, and
Salt (1/2 tsp)
.
Step 5
Add
Buttermilk (1 cup)
,
Large Eggs (2)
, and melted
Butter (1/2 stick)
. Whisk ingredients to combine.
Step 6
Pour cake batter into the iron skillet and place in the smoker. Cook for 45 minutes to 1 hour or until a toothpick inserted into center comes out clean.
Step 7
Remove the cake from the smoker and allow to cook for 5 to 10 minutes. Flip the cake onto a serving platter and serve.
