Prepare smoker or grill for indirect cooking at 350 degrees F (180 degrees C).
In a medium size iron skillet add melted Butter (1/2 stick). Swirl the skillet so the butter costs the sides and bottom evenly. Sprinkle Brown Sugar (3/4 cup) around the bottom of skillet.
Arrange Pineapple Slices in Juice (1 can) in a single layer and place Maraschino Cherry (1 jar) in the center of each ring.
In a large mixing bowl combine the All-Purpose Flour (1 1/2 cup), Granulated Sugar (1 cup), Baking Powder (1 tablespoon), and Salt (1/2 teaspoon).
Add Buttermilk (1 cup), Large Egg (2), and melted Butter (1/2 stick). Whisk ingredients to combine.
Pour cake batter into the iron skillet and place in the smoker. Cook for 45 minutes to 1 hour or until a toothpick inserted into center comes out clean.
Remove the cake from the smoker and allow to cook for 5 to 10 minutes. Flip the cake onto a serving platter and serve.
