This super delish Vegan Thai Peanut Noodle Stir Fry is the perfect quick fix! The prep is very simple! Cook noodles, chop the sweet potatoes, and steam in the microwave. 5-Ingredient Thai Peanut Dressing
or Vegetable Oil
Low-Sodium Soy Sauce
Creamy Natural Peanut Butter
Toasted Sesame Oil
Roasted Sesame Seeds
Sweet Potato (1)
in covered casserole dish in 1-2 inches of water for 6 minutes in the Panasonic Microwave Oven until soft.
In a bowl, whisk together
Canola Oil (1/2 cup)
Low-Sodium Soy Sauce (1/4 cup)
Creamy Natural Peanut Butter (1/4 cup)
Maple Syrup (1/4 cup)
Toasted Sesame Oil (1 Tbsp)
Sesame Seeds (1 Tbsp)
. Set aside.
Grapeseed Oil (as needed)
to wok or pan and cook drained sweet potatoes,
Broccoli Florets (2 cups)
Red Chili Pepper (1)
for 2-3 mins to desired texture.
Pour dressing over
Linguine (8 oz)
and stir. A generous amount will give more flavor.
Pile noodles in a bowl with veggies on top. Add
Scallions (3 stalks)
Roasted Sesame Seeds (to taste)
